Darian Schmidt is the Executive Pastry Chef at The Ned and a contestant on Bake Off: The Professionals 2025. He spent most of his time working in three-star Michelin restaurants in Germany before he made the move to the UK in 2023.
Darian always wanted to be a chef. He told his parents he was going to become a chef when he was only 4 years old. He began his first apprenticeship at the age of 15 in Germany’s oldest Michelin-starred restaurant, Adler in Häusern, in the Black Forest. The Germany-born chef moved to Gmeiner in Appenweier near Strasbourg for a second apprenticeship, where he learned everything about pastry.
Darian stayed at Adler for three years before moving to Hamburg. He then had the opportunity to work at his first three-star Michelin restaurant, Restaurant Überfahrt at Tegernsee, under Christian Juergens. He spent four years there, starting as a demi chef and eventually becoming the executive pastry chef.
Darian then joined the two-star Schanz Restaurant in Mosel as an executive chef, where the team earned a third star. He then moved to London to work as the executive pastry chef at the three Michelin-starred Hélène Darroze at The Connaught before joining The Ned.

Executive Pastry Chef Darian Schmidt is a contestant on Series 10 of Bake Off: The Professionals, presented by former Great British Bake Off contestant and Junior Bake Off judge Liam Charles and comedian, actress and writer Ellie Taylor. He is representing The Ned in the competition alongside Pastry Chef Yadira Jauffrineau.
Bake Off: The Professionals will return to Channel 4 at 8 pm on Tuesday, May 27, 2025. And returning for their tenth series are judges Benoit Blin, Chef Pâtissier at Raymond Blanc’s Le Manoir aux Quat’Saisons, and Cherish Finden, formerly Executive Pastry Chef of the Pan Pacific London Hotel.
