His Michelin training and award-winning status mark him as one of Northern Ireland’s emerging culinary stars.

Through “Cooked by Callum,” Callum runs a dynamic private dining business that has seen him cater to prominent events and clients in the spheres of sports, business, and hospitality. His work at The Rabbit Hotel complements his business endeavors, showcasing a blend of technical prowess and creative flair deeply rooted in Northern Irish culinary traditions.

Callum’s academic journey in Culinary Arts Management at Ulster University culminated in a first-class honors degree. During his studies, he earned an academic scholarship to Hong Kong, mentored by celebrated chef Ken Hom. His university years also saw him clinching the Féile MasterChef title and winning a competition commemorating the 25th anniversary of Heston Blumenthal’s The Fat Duck, a three-Michelin-starred establishment.

While still a student, Callum joined the team at Belfast’s Michelin-starred Muddlers Club, contributing to their success in securing their first Michelin star. His culinary résumé is further enriched by his stints at renowned restaurants like Edo, where he worked alongside esteemed chefs Lottie McKee and Matt Jordan.

In 2025, Callum’s expertise was showcased when he served as a private chef during a prestigious four-day event at The Open Championship hosted at Royal Portrush, crafting dishes for esteemed guests. His talents have been highlighted in the culinary series “Northern Ireland on a Plate,” and he has received recognition as the Best Young Person in Business by the Ballymena Chamber. As an ambassador for Springboard’s FutureChef program, Callum is dedicated to mentoring the chefs of tomorrow.
