Laurence Louie, a Chinese-American chef, has captured the culinary world’s attention as a contestant on “Top Chef 2026.” He is the creative force behind Rubato HK Café in Quincy, a restaurant celebrated for its innovative and personal twist on Chinese American cuisine. Louie’s culinary prowess was first showcased when he claimed victory in the Food Network’s “Chopped” in 2024, in an episode fittingly titled “A Little Taste of China.”

Louie holds a Master’s degree in American Studies from the University of Massachusetts Boston, which he earned in 2011. Early in his career, he dedicated time to community service as a nonprofit organizer supporting Boston’s Chinatown residents. His journey then took him on an immersive trip to China, where he studied Mandarin, joined a university basketball team, and honed his cooking skills as an apprentice in a hand-pulled noodle shop. It was in Southern China that Louie reconnected with his culinary heritage.

Before committing to a full-time culinary career, Louie co-owned and cooked for the Olio Culinary Collective, a worker-owned catering group. Upon his return to the U.S., he embarked on a professional culinary path, securing a position at Oleana, the esteemed Cambridge restaurant led by James Beard Award-winning chef Ana Sortun. There, he advanced to the role of Junior Sous Chef.

Louie’s culinary journey also led him to London, where he gained invaluable experience in renowned kitchens and worked under the tutelage of celebrated chef Selin Kiazim. He eventually rose to Head Chef at Kiazim’s flagship restaurant, Oklava. The pandemic brought him back to the U.S. when his mother invited him to take over her Cantonese bakery, prompting him to explore new possibilities for the space.

Rubato

In 2022, Louie opened Rubato, a Hong Kong-style café that artfully blends his Chinese-American heritage with sophisticated culinary techniques. Since its opening, Louie has been recognized as a semifinalist for the prestigious James Beard Award for Best Chef: Northeast in 2024. He was also honored as a StarChefs Boston Rising Star Chef, and Rubato earned a spot on Bon Appétit’s list of 2023 Best New Restaurants.
