Ryan McVay, a distinguished English chef and restaurateur, is making waves as a contestant on the Great British Menu (GBM) 2026. As the founder and head chef of The Calabash Tree, located at Sheepfolds Stables in Sunderland, McVay has introduced the city to its first Trinidad & Tobago restaurant, celebrating the vivid and dynamic flavors of his cultural roots.
The inspiration for McVay’s culinary venture struck at a street food event in 2015, where he recognized a lack of representation for the rich culinary traditions of his heritage. Determined to fill this gap, he named his restaurant after the calabash tree, a symbol native to the Caribbean region.
Born in Washington, McVay’s passion for food was deeply influenced by his Trinidadian mother and his English father, a classically trained chef and catering lecturer. After dedicating 14 years to the fire service, McVay faced a career-ending injury that prompted him to pursue his culinary dreams full-time.
Building his reputation through street food events, pop-up eateries, and a highly successful lockdown weekend menu, McVay became known for his dedication to authentic Caribbean flavors, using spices sourced directly from the Caribbean.
