Sieger Bayer, the mastermind behind bar Berria in Chicago, IL, serves as its Executive Chef and owner. Known for his appearances on popular culinary shows like Bravo’s Top Chef, Chopped, and Beat Bobby Flay, Bayer has a rich culinary history. His impressive resume includes experience at notable establishments such as Here’s Looking at You in Los Angeles, Curtis Stone’s ventures, etta, Sqirl, Tortello, The Publican, The Heritage Restaurant in Forest Park, B. Hospitality Co., and Element Collective.
Although Sieger spent much of his youth exploring his mother’s garden, it was during high school that he decided to embark on a culinary career. After graduating from Kendall College’s culinary program, he ventured to Europe, honing his skills in the kitchens of Spain, France, Germany, England, and Italy. His journey eventually led him back to Chicago, where he gained experience at prestigious restaurants like Nellcote, the James Beard Award-winning The Publican, Tortello, and his initial venture, The Heritage.
During the pandemic, Bayer sought new experiences in Los Angeles, where he led the kitchens of etta, Sqirl, and Here’s Looking at You. By 2024, he returned to his roots in Chicago to launch his dream endeavor, bar Berria. This restaurant features an ever-evolving American menu, reflecting Bayer’s innovative approach to seasonal ingredients and global culinary techniques.
At bar Berria, ingredients are grown on-site in over 30 raised garden beds. The restaurant emphasizes preservation and fermentation to celebrate local produce, even during Chicago’s harsh winters. As the heart and soul of bar Berria, Bayer takes pride in supporting the community and crafting bold hospitality experiences.
