Martin Baylis is the culinary mastermind behind North Devon’s celebrated dining spots, New Coast Kitchen and Restaurant Roku. Known for his skillful blend of British ingredients with delicate Japanese touches, Baylis has carved a niche for himself in the world of fine dining. His culinary expertise will soon be on display as he represents the South West in the 2026 season of BBC Two’s Great British Menu (GBM).
Although born in Germany, Baylis was raised in Worcester, where his English father and Japanese mother exposed him to a rich tapestry of culinary traditions. This diverse background laid the foundation for his unique cooking style. Martin and his wife made the move to North Devon, enticed by the bounty of local produce the area offers. Here, he realized his dream of crafting menus that prioritize seasonal and local ingredients, bringing his modern culinary vision to life.
New Coast Kitchen, nestled in the charming village of Croyde, has thrived under Baylis’s leadership, earning a spot in the esteemed Michelin Guide and boasting 2 AA Rosettes for its innovative British fare. His latest endeavor, Restaurant Roku, also located in Croyde, offers an inventive tasting menu that reinterprets British cuisine with Japanese influences. The restaurant’s name, Roku, which means “six” in Japanese, signifies both the structured six-course menu and its philosophy of savoring each dish’s intricate flavor and texture.
Marriage
Martin Baylis, a seasoned chef and devoted husband, has been married since 2016. His culinary journey will reach a new milestone as he competes in the 21st series of Great British Menu. Joining him in representing the South West are Ciaran Brennan, Head Chef at Osip; Mark Tuttiett, Head Chef at Da Terra; and Jeffrey Robinson, Executive Chef at Harbour View House.
Great British Menu
Executive Chef Martin Baylis is competing in Series 21 of Great British Menu. He will be representing the South West on GBM, alongside Ciaran Brennan, Head Chef at Osip; Mark Tuttiett, Head Chef at Da Terra; and Jeffrey Robinson, Executive Chef at Harbour View House.
The BBC show, which is presented by Andi Oliver and features top chef Tom Kerridge as a lead judge, brings together 32 of Britain and Northern Ireland’s most talented chefs across eight heats. They’re vying for the chance to craft show-stopping dishes honouring the British film industry with links to their region or nation, and to secure a spot cooking at the grand finale. Martin’s competition menu is a celebration of the South West and its films.
The triumphant chefs will prepare their creations at a banquet for the film industry, hosted at St George’s Hall in Liverpool, which doubled as Gotham City Hall in The Batman.
