Jai Johns is a Barista and a contestant on The Great Australian Bake Off 2025. The plant-based baker is a self-confessed nerd, specifically when it comes to baking. They discovered their love for baking during lockdown, where they read cookbooks from cover to cover and became fascinated with understanding the science of it.
A passionate vegan, Jai relishes the challenge of incorporating flavours from their adventures into their bakes. They’re particularly inspired by classic French techniques with Asian and Middle Eastern flavours.

Plant-based baker Jai Johns, 28, is a contestant on Season 8 of The Great Australian Bake Off, hosted by Natalie Tran and Tom Walker, and judged by Rachel Khoo and Darren Purchese. Their big smile and sense of fun will light up the shed.
Jai announced the news on Instagram, writing: “Hard to know what to say here without being a complete cliche. I’ve been lying through my teeth to friends and family for close to a year about what I’ve been up to, so it’s a huge relief to finally be able to talk about it!
“I believe I am the first ever plant-based baker on @bakeoffau which is really cool and also quite terrifying because I feel a bit like I’m going in to bat for veganism on national telly!”
“I met some truly fantastic people on this show and I’m so excited for you to see them in action.”
