Exose Grant, whose full name is Exose Grant Lopo-Ndinga, leads the kitchen at Australasia in Manchester and is a competitor on the BBC’s Great British Menu 2026. Although he was born in London, his upbringing took place in Manchester, where he first dipped his toes into the culinary world at a neighborhood sandwich shop, sparking his initial interest in food service.
His mother, who raised him as a single parent, was pivotal in cultivating his enthusiasm for cooking, showing him the joy and innovation in the kitchen. At just 18, Exose embarked on his professional journey as a chef at James Martin, Manchester, dedicating four years there to perfecting his craft in pastry and the art of fine dining.
Exose’s talent shone brightly when, at 22, he captivated audiences on MasterChef: The Professionals 2019, making it to the final stages with his inventive dishes and masterful techniques. That same year, he also joined forces with his friend Sanjam Nagpal to compete in Bake Off: The Professionals.
In early 2022, at 24, Exose took the helm at BLVD Manchester, where he spent a year curating a diverse array of Pan-Asian style menus. After the lockdown, he ventured into entrepreneurship by launching Exose at Home, a private dining and catering service that offers tailored meals, custom cakes, and event catering, reflecting his innovative spirit.
By 2023, Exose had opened Ikaro Manchester, a seafood and grill restaurant, though it closed its doors in 2024. His cooking is a heartfelt fusion of influences, from the comforting flavors of family meals to sophisticated fine dining, always infused with his unique flair and personality.
Exose is Head Chef at Australasia Manchester as well as running his private dining business. He has used his creativity to showcase a menu that celebrates the North West and he uses produce grown by his mum.
