According to the company, cocoa butter is the unique ivory-colored fat making up 50 to 54% of roasted cocoa beans. Although it has minimal flavor on its own, cocoa butter greatly enhances the richness and depth of chocolate’s taste. It makes chocolate smooth when melted and crisp once it hardens.
