Two yellow placards posted in Champaign Co. after health inspections

CHAMPAIGN COUNTY, Ill. (WCIA) — Two food establishments in Champaign County received yellow placards following health inspections this week.

Outback Steakhouse

On May 16, Outback Steakhouse, located at 2402 N Prospect Ave. in Champaign, received a yellow placard.

During the restaurants last health inspection on April 17, a health inspector issued a Violation Correction Form for multiple issues.

First, several food items including raw chicken, raw ribs, cooked ribs, milk and cocktail sauce were being held above the required 41ºF. Outback Steakhouse was told they would need to submit proof that they could keep their foods at cold enough temperatures.

Second, the hot water in the handwashing sink was turned off. The person in charge told the inspector that the water doesn’t stop, even after turning off the water tap. The restaurant was required to submit proof that the faucet had been replaced.

There were also two issues found with the backflow devices. First, the drain line of a steamer in the prep room sat directly on the floor of the drain mesh, and provided no air gap protection, according to the report. Outback Steakhouse was required to submit proof of at least a 1-inch gap at the steamer drain line.

The health inspector also found that the mop sink faucet was missing something: about 25 feet of hose was attached to the mop sink faucet with a sprayer on the other end used for dish washing. During the inspection, the person in charge removed the hose from the mop sink faucet, and the restaurant will need to submit proof of a water-wasting T installation at the mop sink faucet.

Outback Steakhouse was required to submit proof of their corrections by May 1. During the May 16 inspection, the inspector found that the cooling and cold holding procedures that were submitted were “incorrect and insufficient.” The restaurant also did not create a large enough air-gap steamer drain line, and had not installed a water-wasting T.

A yellow placard was posted. If the proper corrections are not done by May 29, the health permit will be suspended, and a red placard will be posted.

Lincolnshire Fields Country Club

Lincolnshire Fields Country Club, located at 2000 Byrneburk Drive in Champaign, was given a yellow placard on May 19. During an inspection on April 18, the health inspector found that the person in charge was not a certified food protection manager (CFPM).

The country club was required to submit proof that at least two employees were enrolled in the class, as well as proof of the CFPM’s coverage during the kitchen’s working hours by May 2.

The country club was given a 10-day extension, but failed to submit the required paperwork on May 16, according to an inspection report. A yellow placard was posted at 2 p.m. on May 19, and the Lincolnshire Fields Country Club was required to submit the paperwork by June 2 or risk receiving a red placard.

Soon after the yellow placard was posted, the person in charge submitted the correct paperwork. The yellow placard was taken down about an hour and a half after it was put up on May 19, according to an inspection report posted later that day.
