The Blu Halo brings Americana dining to St. Pete

ST. PETERSBURG, Fla. (BLOOM) — A new chapter of fine dining has arrived in St. Petersburg with the official opening of The Blu Halo, a modern Americana steak and seafood restaurant now serving guests at the Echelon City Center in Carillon Park.

The Blu Halo St. Pete celebrated its grand opening this week with an exclusive VIP dinner, debuting a chef-driven menu and a sleek, club-like ambiance. The restaurant, an expansion of the original Tallahassee location, features elevated takes on classic American dishes, alongside handcrafted cocktails, a curated wine list, and a members-only wine locker program.

“We’re excited to bring The Blu Halo’s modern take on Americana cuisine to the vibrant St. Pete community,” said Andy Donato, general manager of the new location. “After years at our first location in Tallahassee, our team wanted to bring this experience to South Florida.”

Helmed by Executive Chef David Smith, the menu blends premium ingredients with classic techniques, drawing inspiration from Mediterranean and Italian cuisine. Signature dishes include the Blu Halo Chop with blueberry chutney and goat cheese, spicy Harissa Salmon, and a 14-ounce ribeye. The sea bass, topped with a toasted walnut tapenade, is already emerging as a standout among early guests.

“Our goal is to offer a dining experience that feels both familiar and exciting,” said Smith. “We’ve taken beloved American flavors and elevated them with a fresh approach.”

In addition to its lunch and dinner service, The Blu Halo plans to offer weekend brunch and private dining options. The restaurant’s wine locker program provides guests with personalized storage and access to exclusive selections, a unique feature aimed at enhancing the high-end dining experience.

Located at 221 Main Street North, The Blu Halo St. Pete is now open to the public.
