Dan Herbert is a 32-year-old senior sous chef who currently works at The Harper Hotel in Langham. He is a contesant in MasterChef: The professionals 2023.

The chef was born in Norfolk and after a stint of work experience in a local café as a teenager, he was encouraged and supported by the owner in going to catering college.

He moved to Australia in 2011. He said, “In 2011 I moved to Australia and that’s where my love of cooking really stepped up a gear.”

Chef Herbert said he he loves cooking because he likes taking simple ingredients and experimenting with them to turn them into “something unreal”.

He spent a year working in Australia, which further ignited his passion for food, and has since worked in AA Rosette-winning and Michelin-starred restaurants.

Herbert has had roles in a variety of AA Rosette and Michelin-starred kitchens throughout his career, including The Neptune in Old Hunstanton and Congham Hall in King’s Lynn. He has done stages in Michelin-starred restaurants including Raby Hunt in Darlington and Michael Wignall at The Latymer, Pennyhill Park.

Describing his style of cooking and influence: “I’ve worked in lots of classic fine dining restaurants, which massively influences me, but I’d describe my own cooking style as rustic fine dining rather than the classical approach – letting the flavors speak for themselves.” He said.

Outside of cooking, he is a big football fan who likes going to watch his local team, Cromer, play. The chef also enjoys going to the gym, eating out, and getting tattoos. He has one under-the-sea-themed arm and the other is space and Star Wars-themed.

He, of course, has some food-themed tattoos including fruit, veg, and a Cornish pasty.

It’s important as a chef to constantly learn and pushing yourself in a competition is a good way of doing that. I want to give this my best shot.”

He said he discovered his love of cooking when he was 15 and got his first job in a local cafe.
