Vibrant red chili paste has become an essential ingredient in many trendy cafes today. This versatile sauce finds its way onto noodle bowls, seafood, eggs, street tacos, and, as some enthusiasts suggest, even enhances the flavor of a traditional roast dinner.

Sriracha enthusiasts might be intrigued to discover that the condiment’s origins trace back to the 1930s. It was first concocted in the coastal city of Si Racha, Thailand, marking the humble beginnings of what would become a culinary phenomenon.

Nevertheless, the modern version of the sauce, featuring its iconic distinct green cap and the famed rooster logo, did not make its debut until the 1980s. This marked a new chapter in its flavorful history.

Florence Pugh, a well-known actor, recently shared with British Vogue that she routinely carries a small bottle of sriracha in her handbag. For her, “because bland food is a tragedy,” always having this fiery sauce on hand is essential.

The condiment’s rise to fame has also been bolstered by its feature on the popular YouTube show Hot Ones. This series, which showcases celebrities like Louis Theroux, Tony Hawk, Doja Cat, Cardi B, and Harry Kane bravely sampling fiery chicken wings, has certainly kept sriracha in the spotlight.

Known for its rich spicy, sweet and garlicky taste, the Thai chilli sauce is made by fermenting red jalapeño or sun-ripened chilli peppers, before blending with flavourings such as vinegar, garlic, sugar and additives to preserve shelf life.

A teaspoon serving of one of the most popular sriracha brands, Huy Fong Foods, contains just five calories and almost zero fat, making it a popular choice for dieters.

But according to the experts, there’s a hidden health risk that regular eaters should know about. 

‘Generally, most hot sauces are quite low calorie and a good condiment choice,’ says Jessica DeLuise, a US-based specialist in culinary medicine and registered dietitian.

‘For people who are aiming for weight loss, we often talk about “flavour boosters” and hot sauce is a great one – adding a lot of flavour for few calories.

‘However, there are added ingredients that we should watch out for.’

Top nutritionist Jenna Hope, author of How to Stay Healthy, explains: ‘While brands vary, sriracha contains around 10 per cent of the maximum daily sugar intake in one small serving.’ 

This can quickly add up because sriracha bottles come with a nozzle and it can be easy to squirt more than you realise onto food.

This proportion of sugar sits just under the UK threshold for a ‘high sugar’ label. There’s roughly the same amount as you’ll find in a serving of Heinz Tomato Ketchup, or a McVitie’s Rich Tea biscuit.

Diets high in sugar can not only damage teeth, but trigger hunger pangs, increasing the risk of overeating, studies have found. 

And that’s not Ms Hope’s only concern. Sriracha contains roughly twice the amount of salt as you’ll find in the equivalent serving of ketchup. A tablespoon will provide around 13 per cent of your recommended daily intake of sodium – the chemical in salt that is responsible for negative health effects. 

‘Eating too much sodium in your diet can cause high blood pressure, heart disease, and strokes,’ says Hope.

This is because it forces the body to hold onto extra water, which puts extra pressure on the blood vessels and kidneys.

To maintain its shelf life, sriracha also relies on chemical preservatives such as potassium sorbate and sodium bisulfite.

Ms Hope explains: ‘Chemical preservatives can harm the healthy bacteria in our gut.’ 

Studies have linked frequent consumption of additives such as these to a host of life-limiting conditions, including heart disease and bowel cancers. 

And what of the claim that spicy foods have health benefits? 

Ms Hope says that the small serving size of sriracha is unlikely to provide any real positives.

 ‘There is a belief that sriracha can lower cholesterol, likely due to the chilli component. However, the chilli content isn’t high enough to have significant effects.’

The main medicinal compound in chilli peppers is capsaicin, which is praised for boosting metabolism, reducing inflammation and improving heart health. 

The actual volume of pure, capsaicin-rich pepper in one teaspoon of sriracha is far below the threshold used in clinical studies.

To get a therapeutic dose of capsaicin from sriracha, you would need to eat it in large quantities – and this is generally not advised due to the amount of sugar and salt. 

Though sriracha is generally safe to eat in small amounts, the chilli peppers and garlic that produce the rich umami taste can trigger acid reflux, heartburn, or stomach pain in people who have conditions like irritable bowel syndrome.

If you’re looking to cut back, Ms Hope recommends going back to basics.

Historians believe that the world’s first hot sauce was created in 7000 BC by mixing ground chillies and herbs with water. 

To add a modern twist, the top nutritionist recommends making a homemade chilli dressing with olive oil, lemon juice, fresh chilli and a pinch of salt. 

Many low-carb dieters use plain sambal oelek (ground fresh chilli paste) as a direct, zero-sugar substitute for sugary sriracha.

However, Ms Hope warns that while sambal oelek is a lower sugar option, the salt content is likely to be similarly high.

Sriracha is also often added to mayonnaise to create a creamy, spicy condiment, often enhanced with garlic powder and citrus juice. 

A standard two-tablespoon serving packs about 180 calories and 20g of fat, mostly from refined oils and egg yolks. 

It can be made healthier by mixing non-fat Greek yoghurt with sriracha, a dash of lime juice, and garlic powder for a high-protein, low-fat alternative. 

Overall, the top nutritionist’s verdict is that sriracha can be enjoyed in moderation – but a small drizzle can quickly stack up in sugar and salt. 

According to experts, Kohberger is facing formidable challenges in his bid to reverse his guilty plea in the murder case revolving around the four university students. A seasoned attorney, who once represented the infamous D.C. sniper Lee Boyd Malvo and has a history of helping clients successfully withdraw pleas, explained the complexity of Kohberger’s situation.

Mark Petrovich, a lawyer with extensive experience in criminal defense and post-conviction proceedings, provided insight into this rare legal process. Speaking to News Media, Petrovich pointed out that defendants often struggle to rescind guilty pleas post-sentencing, particularly when the claims involve unrecognized exculpatory evidence prior to the plea agreement.

Petrovich advised against drawing too close a parallel between Kohberger’s current legal efforts and Malvo’s past appeals. The latter’s appeals were influenced by evolving constitutional laws concerning juvenile sentencing, whereas Kohberger is an adult attempting to nullify a plea deal strategically designed to sidestep the death penalty.

“This is truly a monumental uphill battle,” cautioned Petrovich. “First, convincing the judge to permit the plea withdrawal is challenging, and subsequently prevailing in potential new proceedings poses even greater difficulties due to substantial obstacles.”

Kohberger pleaded guilty in July 2025 to the stabbing deaths of University of Idaho students Ethan Chapin, Xana Kernodle, Madison Mogen and Kaylee Goncalves in Moscow, Idaho, in November 2022. He was sentenced to four consecutive life sentences without the possibility of parole after accepting a plea agreement that spared him from the death penalty.

In recent court filings, Kohberger claimed he was pressured into accepting the plea agreement, did not fully understand potentially exculpatory evidence before pleading guilty and was misled about the conditions he would face while incarcerated.

He contends those factors undermined the voluntariness of his decision to plead guilty.

Petrovich said he once represented a client who sought to withdraw a guilty plea before sentencing. A judge granted the request, the case proceeded to trial and the client was acquitted, but he said Kohberger’s circumstances are fundamentally different because he has already been sentenced.

“You can’t wait until after you’re sentenced and see what the consequences of the plea are and then change your plea,” Petrovich said. “It’s going to be a very, very difficult burden to overcome.”

Petrovich said Kohberger would face two significant hurdles even if a judge allowed him to withdraw his plea.

One would be convincing jurors after previously admitting guilt under oath.

Even if a judge allowed Kohberger to withdraw his plea, Petrovich said jurors would almost certainly learn he had already admitted guilt, creating another significant obstacle at trial.

“One thing that’s important is that you still can’t hide from the jury the fact that you said under oath that you’re guilty,” Petrovich said. “Even if you withdraw, then you have to explain that … if you’re going to get anywhere with any kind of jury finding.”

Petrovich also questioned whether Kohberger’s attorneys would have advised him to accept a plea agreement without first reviewing the evidence disclosed during discovery.

He noted that defense attorneys handling capital cases typically spend years reviewing discovery before recommending whether a client should plead guilty.

“The attorneys on the case … were intimately familiar with the evidence and the information that was provided to them by law enforcement and prosecution,” Petrovich said. “I’m sure they knew all about everything. If they encouraged him or if there was a discussion and a plea was decided on, I’m sure it was for good reason.”

Kohberger’s case is not the first involving a notorious killer who later sought to undo a guilty plea.

James Earl Ray pleaded guilty in 1969 to assassinating the Rev. Martin Luther King Jr. to avoid a potential death sentence. Three days after entering his guilty plea, Ray sought to withdraw it, arguing he had been pressured into confessing. He spent the rest of his life trying to undo the plea but died in prison in 1998 without ever receiving the jury trial he sought.

Serial killer Clifton Bloomfield unsuccessfully sought to withdraw guilty pleas after admitting to five murders in New Mexico to avoid capital punishment. Washington serial killer Robert Lee Yates Jr. also challenged his plea agreement after admitting to murdering 13 women, but courts ultimately rejected both efforts.

Kohberger’s plea agreement spared him from facing a capital trial and ended years of pretrial litigation in one of the country’s most closely watched murder prosecutions.

Petrovich said that history, combined with the years of discovery and plea negotiations leading up to Kohberger’s agreement, makes the effort to withdraw it especially difficult.
